This recipe is different compared to anything I’d normally choose to bake. So, why not? A meringue cake with cream cheese topping and frosted cranberries? The finished product looked so beautiful! This is an impressive looking cake and it doesn’t seem too difficult. So, I made it and everyone loved it! What I love about this cake is the range of both flavors and textures. The cake is light but also chewy and the ginger flavor is just enough. The topping is smooth, creamy, and sweet. And then those sugar coated cranberries bring a perfect sour crunch! It’s really impressive what you can get in one bite.
Some of my family say that the cranberries are too tart, but in my opinion it balances out with the other flavors. So if you like a range of taste and texture, try this cake! It requires a few steps, but it looks very pretty in the end. You will quickly trick your guests into thinking you are a top star baker when they see this cake. Both the look and taste will deliver.
