Guacamole
I may be jumping the gun again, but lately the spring weather is putting me in the mood for burgers and tacos. I need the grill going and vegetables overflowing. Bright flavors and outdoor dining. Sounds heavenly. Anyone else ready to join?
Guacamole was my craving of the week, so I am sharing my keys to success with you! Avocados can be very difficult. I think I’ll always have a love-hate relationship with them. They’re so good when they’re good, but it’s very difficult to catch them on a good day. My method is to basically continuously check the avocados ripeness by giving them a daily squeeze. As soon as they’re a little soft to the touch I prepare to use them within a day or two.
This week I bought a big bag from Costco so I used one or two for avocado toast and then I needed to use the other four stat. What better than guacamole? I think it’s best with avocados that are pretty soft, almost mushy, like they need to be eaten within 24 hours or they’ll be brown and gross. If you use avocados that aren’t fully ripe, your guac will be very chunky and just not very good. So be persistent and keep checking! Wait for the right moment.
The other keys you must have for good guacamole are cilantro, lime, and onion. Without these, don’t bother. It’s my opinion, but I’m pretty confident. There are a few variations that can go either way, so you can spice things up as much as you want!
Basically, I mash up the avocados, add the lime, salt, and a little hot sauce, then chop up the cilantro, red onion, garlic, and tomatoes and throw that in too. Taste and salt as needed.
Guacamole is full of flavor, so it’s great to add to tacos, salads, some sort of taco bowl, or eat it with some chips. This recipe is real tasty and so easy. Just get those avocados ripe first! Spring is springing with this one! Enjoy, friends.
Guacamole
Ingredients
- 2 avocados
- 1 small tomato
- 1 lime
- 1 small garlic clove
- 1/2 chopped red onion about 1/4 cup
- 1/4 cup chopped cilantro
- 1/4-1/2 tsp salt
- Hot sauce or cayenne pepper to taste
Instructions
- Juice lime into a medium size bowl
- Scoop avocados into bowl and mash to desired texture
- *Add a little bit of oil if you want a creamier or smooth texture
- Finely chop cilantro and add that to avocados
- Mince garlic then dice red onions and tomatoes and add those too
- Mix in 1/4 tsp of salt and add more to taste
- If desired, add a bit of hot sauce or cayenne pepper to spice it up a little bit!
