Buffalo Chicken Dip

Well, my Packers didn’t make it. Again. Rough loss, but we will carry on. So, who are you rooting for? I’m going Bengals this year because it’s fun to watch a new quarter back who isn’t afraid to play. Rawr.

Anyway, what do we actually care about for Super Bowl Sunday? The food, of course. What a great excuse to eat a ton of dips, cheese, and fried snacks. It’s the one day of the year when it doesn’t feel so wrong. This appetizer is one of the most requested dips. I understand. I mean, buffalo chicken dip can be a full meal anyway, right?

The Dip Foundation

I love dips. Period. Anything that you can have multiple dippers and includes cheese, I’m there. Spinach dip, guacamole, seven layer dip, plain old chips and onion dip. It’s all delicious.

This recipe is perfect because it gives the basics, but you can totally change it up and use what you like. Many recipes call for sour cream or cream cheese. We are using cream cheese; I like a little sweeter and I think it gives a better texture. Mozzarella cheese is one that can never disappoint, but you can also add in cheddar or bleu cheese if you prefer it! Honestly, you can’t mess this up.

My family often likes the standard recipe. They don’t like me to stray too far into adventure territory when it comes to flavor and texture. Boring, I know. Sometimes I comply with their wishes. In this case, I think we will go the simple and standard route. I know they’ll like it and so will I. 

For the chicken in this dip, you can use canned, rotisserie, or leftover chicken breasts. I can’t do the boiled chicken, so I won’t advise you to either. I actually made a few chicken breasts in my Instant Pot, with some basic seasonings, so I used some of that for this dip. I always use chicken, so it doesn’t hurt to have some on hand for lunches or last minute dinners. So, you can do that too if you want!

Play by Play

Use a glass or oven-safe baking dish and in it mix the softened cream cheese, ranch dressing, and hot sauce. Add most of the cheese and combine well. Top with remaining bit of cheese and bake at 350 for about 10 minutes or so. You want a slight bubble so everything is nice and melted together.

Five ingredients just can’t be beat. Make this on Super Bowl Sunday and everyone will be happy (even if it’s just you). Serve this buffalo chicken dip with chips and some crunchy veggies like celery or carrots! Happy game day, friends!

Ingredients

  • 1 8 oz package cream cheese softened
  • 1/2 cup buttermilk ranch dressing
  • 1/2 cup buffalo style hot sauce
  • 1 cup shredded mozzarella
  • 4 oz shredded cooked chicken

Instructions

  • Preheat oven to 350 F
  • Place cream cheese in small baking dish and stir until smooth 3. Mix in ranch dressing and hot sauce
  • Add most of cheese and chicken and stir
  • Top with remaining cheese
  • Bake for 15-20 minutes
  • Serve with chips and veggies!
