Roasted Sweet Potatoes
It’s been a week. Anyone else with me on that one? Some challenges have been thrown my way and with that, my brain is just scrambled. I always say that perspective is everything. So, I keep reminding myself of that amidst a slight storm in my personal life. Even though some things are not in my control, Jesus is and I have many, many things to be thankful for despite it all. So, if you are having a rough week, tomorrow is a new day! Weekends are refreshing and hopefully some happy spring weather and yummy simple food will settle the chaos.
Anyway, today’s recipe is simple with a capital S. You know I love easy. This is something that is made in my house weekly, if not more. When it comes to potatoes, I always pick sweet potatoes. I rarely buy other potatoes unless it’s for something specific. Sweet potatoes are just always in my shopping cart and constantly a side dish for so many meals.
One reason I love making roasted sweet potatoes is because it can be done in the oven or on the grill. Summer means I avoid the oven at all costs, so the grill does the job just fine for this recipe. Another reason I love this is because it’s quick to roast them. I love whole sweet potatoes too, but they take quite some time to bake, especially if they’re large.
So, I like to chop these potatoes pretty small, again for quick roasting time. Toss them with avocado oil (or the oil of your choice), salt, and cinnamon. Bake them for 20-30 minutes on 350 and that is it! You could also change up the cinnamon and use cayenne instead for a spicy version! I just love cinnamon and the whole family gobbles these up. Three ways we regularly eat these sweet potatoes:
- Side dish – pair with some roasted chicken and vegetables
- Salad- add this to a kale salad for some starch along with a good protein for a well-rounded salad!
- Bowl- rice, sautéed kale or spinach, chicken sausage, and sweet potatoes are a great bite. Add some onions too if you have time! Yum.

Roasted Sweet Potatoes
Ingredients
- 1 lb sweet potatoes
- 3 tbsp avocado oil
- 1 tsp salt (or more to taste)
- 1/2 tsp cinnamon
Instructions
- Preheat oven to 350
- Chop sweet potatoes into 1/2-1 inch pieces
- Place on lined pan
- Toss with oil, salt, and cinnamon
- Bake for 20-30 minutes total. Check after 10-15 minutes and toss
- Add more salt to taste!
