Salted Chocolate Chunk Shortbread Cookies

Let it snow, let it snow, let it snowwww! It’s a potential snow day here in New Jersey. I’ve always been a fan of snow days, probably more when I was teaching. The excitement just brings you back to childhood, right? I could never live where there is no snow. Though we haven’t had much the past few years, I’m hoping for a few inches today. So, what better day to share one of my favorite cookie recipes?

These cookies are crispy, chocolaty, salty, and sweet. Each piece is really an amazing bite. I cannot take credit for these, as there is nothing I would change about this recipe because it is that good. If you want to change up the mundane chocolate chip cookie in your house, this is the recipe for you!

Recently, my husband introduced me to some of Alison Roman’s recipes in Bon Appetit and NY Times. Quickly after, he bought me her cookbook, Dining In. And this was the year for dining in. Can I get an amen? Alison brings a lot of flavor to her dishes, especially salt and fat. So if you are a fan of Salt, Fat, Acid, Heat (watch it on Netflix if you haven’t already), she has some delicious recipes for you. There are enough that are simple and others that are more adventurous. Obviously, I’m a big fan.

So her cookie recipe for salted chocolate chunk shortbread is so easy! The added salt just really rounds out the flavor. Who doesn’t love salty and sweet together? But, you literally mix the dough in a stand mixer, roll it into log shapes, refrigerate, slice them and bake. They. are. so. good. Check it out here!
