Oven Baked Meatballs

Meatballs are a go-to recipe for me whether I’m hosting a party or just need an easy lunch that I can pull from the freezer. For a party I had back in September, I made about 80 of these meatballs weeks before the party and kept them in the freezer until two days before. I reheated them with a lot of sauce in the crock pot and it worked flawlessly.

Aside from buying the ground beef…you probably have all of these ingredients ready to go to make these! So, don’t be so quick to buy pre-made meatballs. You can even add some other spices to your specific taste.

Why bake meatballs? A real Italian will tell you to pan fry them. They are less fatty if you bake them. They are way less messy to make if you bake them and they are hands off if you bake them. So give it a try!

To prepare these, simply mix the eggs and milk well, then add the other ingredients. The most effective way is to get your hands dirty and really get all of the ingredients into the ground beef.

Hand roll the meatballs into about 1 1/2 inch balls and place on parchment covered baking sheet. Bake them for about 30 minutes. Freeze some, eat some, or sauce some!

Serving

While I didn’t do this step this time (and therefore it is totally not necessary), you can really enhance the flavor by letting the meatballs hang out in your favorite sauce either simmering on the stove top or by putting them in the crock pot on low for a couple hours.

Feel free to substitute panko instead of regular breadcrumbs for a slightly different texture. You can also use fresh basil, finely chopped, instead of dried basil.

Ingredients

  • 1 lb ground beef
  • 2 eggs
  • 1/2 cup milk
  • 1/2 cup grated Parmesan
  • 1 cup bread crumbs
  • 1 small onion chopped
  • 2 tsp minced garlic
  • 1 tsp basil
  • 1/2 tsp oregano
  • 1 tsp salt
  • 1/2 tsp pepper

Instructions

  • Line a baking sheet with parchment paper and pre-heat oven to 350 degrees F.
  • Whisk the 2 eggs and 1/2 cup milk together until homogenous.
  • Add the Parmesan, bread crumbs, garlic, and spices. Whisk until everything is combined.
  • Using your hands incorporate ground beef and onion until everything is evenly distributed. Shape into 1 1/2 inch balls and place on baking sheet.
  • Bake for 30 minutes.
  • To further enhance flavor… let cook in your favorite sauce, simmering on low, for 1-2 hours. OR set in the crock pot with your favorite sauce on low for 2 hours.
