Mujadarrah

When you are pressed for time, this is the recipe you need in your life. Make a large batch of this mujadarrah, have it for dinner and have some leftovers for the rest of the week. I started making this for my toddler. Lentils are a great source of protein and a full meal doesn’t get much easier than lentils, rice and onions. It’s a very simple dish and you can jazz it up if you need to.

Ingredients

For this recipe you can use whichever lentil type you prefer, but your cooking time may need to adjust depending on your choice. Red lentils are a little softer, so you will get a different texture if you choose those. They are also a little sweeter.

Green lentils have a bit of a peppery taste and can take longer to cook and soften. So just be mindful of the differences if you choose them.

Brown lentils are the ones I usually use. They are probably the most commonly used lentils because they are quite versatile. They cook nicely and hold their shape, but they’re still soft enough for a good blend with other ingredients.

When it comes to onions, you can use yellow or white, or even sweet Spanish onions. They will slightly vary in flavor, but really any of them are delicious with the lentils. You just want to use a nice large one!

Finally, the rice is again your preference. There are so many options with rice. I usually choose brown rice because it feels a little more healthy.

Add-ons

Because this is so versatile, you can eat mujadarrah for a quick protein pick-me-up, or dress it up so it’s a well-balanced meal.

One way to eat this is over some sauteed kale or spinach. Eating it over some mixed greens with a little oil and vinegar is also tasty. It’s a great vegetarian protein for salads.

Another way I like to enjoy these lentils is in a pita with some extra hot sauce and a little sour cream. I have also tried it with tzatziki sauce and it’s very yummy.

I spice up this recipe with Gochujang Korean Chili Sauce which gives it a sweet heat. This is not how the recipe is traditionally made, but I happened to buy some of this sauce for another recipe and now try to put it on anything and everything because it is so good! The sauce options are really endless.

Enjoy this one as your main dish with some fixings or for a quick lunch for the kiddos. It’s a great recipe to have on hand.

Lentils, rice and onions with a little extra kick!

Ingredients

  • 2 cups cooked white or brown rice
  • 2 cups cooked green or brown lentils
  • 1 large onion chopped
  • 2 tbsp olive oil
  • 1 tbsp Korean Chili Sauce

Instructions

  • Saute the onion in the olive oil until they begin to caramelize.
  • Add the cooked lentils and the rice, stir to incorporate.
  • Add the chili sauce and stir.
