Fresh Whipped Cream and Berry Compote

So, Grace and I have realized that according to our blog content, we love breakfast. I wouldn’t dispute this at all, but lately every day breakfast is a struggle. If I can step up my breakfast to feel more like an exciting brunch….wow…my day is 100% more successful.

The History

When I was teaching middle school, I became very good friends with a few of my colleagues. Somehow eventually we became known by coworkers as “the squad”. We joked about it then and still do when we get together. But that squad helped me survive as a teacher. It is not a job you can do alone.

Of course, it helped that we all shared one other common interest….food. Eventually we started a tradition of having brunch crepes together. The squad has many talents, so crepes really allowed us to try a lot of fun combinations and we could easily cover both sweet and savory. Win! 

There were times when we didn’t have crepes when we got together, but we would have breakfast a lot. It was delicious. So, since Grace has already shared her pancake skills, I’ve decided to share two of my favorite pancake or waffle toppings to take your breakfast to the next level. They are both very quick, but your meal will reach better-than-restaurant level in minutes. 

I say these are pancake and waffle toppings, but in actuality, both of these can be used in so many ways. They’re great recipes to have in your back pocket for moments when you need to elevate a dish just a little bit. 

Fresh Whipped Cream

The first is homemade whipped cream. I think I’ve explained this before, but my mother always instilled in my soul that homemade is better than store bought. For everything. She is right. Especially when it comes to whipped cream. It’s so simple to make it homemade and tastes a million times better than the canned or frozen version of whipped topping. You literally just put these few ingredients in a stand mixer and whip it good! That’s it. You want to make this fresh, so adjust the amount as necessary, but it will change your world.

Warm Mixed Berry Compote

What better to go with whipped cream than berries? I mean you could just eat a bowl of strawberries with whipped cream and life would be great, but sometimes you don’t have fresh berries. If you’re like me anyway. I always have berries in the freezer for smoothies or moments like this. I love a good berry sauce or compote to top my pancakes, lava cakes, ice cream, and anything else creamy, fluffy, or chocolatey.

One of our squad members, Alex, always made this for our breakfasts, so I have her to thank for this one. Again, this is so easy! You throw berries, sugar, lemon juice into a saucepan and minutes later you have a delicious warm berry compote! It’s perfect for pancakes or waffles. Plus that fresh whipped cream. Save the rest for later and add it to your warm chocolate lava cake.

Homemade Whipped Cream

Nothing elevates a dessert or breakfast like homemade whipped cream

Ingredients

  • 2 cups heavy whipping cream
  • 2-3 tbsp sugar
  • 1 tsp vanilla bean paste or extract
  • 1/2 tsp lemon zest optional

Instructions

  • Use stand mixer on medium speed to begin whipping heavy cream
  • As soon as it starts to thicken, add vanilla and sugar (if using lemon zest, add this too)
  • If you prefer a sweeter cream, add more sugar. It doesn't need to be super sweet because you will usually put this on something sweet like fruit or chocolate!
  • Turn stand mixer on high and allow cream to whip for a few minutes
  • When stiff peaks have formed, serve immediately!
  • Store in the fridge for a day or two if needed. Best consumed fresh!
