Chocolate Lava Cakes
These chocolate lava cakes will take you less than 30 minutes to whip up. The recipe below is easy and you’re likely to have everything on end.
I started making these after many failed mug cake attempts. Mug cakes sound like such a good idea until you actually look at the ingredients. A cake with no eggs? And is it really going to cook evenly in the microwave. My experience has largely been no. So I was looking for something to fill that chocolatey void in my heart and these came in. I’ve made them for me and the husband, doubled it if we have another couple over or even made two and saved one for later!
What You’ll Need for Chocolate Lava Cakes
- 2 oz semi sweet chocolate
- 4 tbsp butter
- 1/2 cup confectioners sugar
- 1 egg
- 1 egg yolk
- 3 tbsp all purpose flour
- 1 tbsp cocoa powder
- 1/4 tsp salt
- Non-stick spray
What Equipment You’ll Want:
- Ramekins
- Whisk
- Mixing Bowls
How to Make this Recipe:
Gather all your ingredients and preheat your oven to 400 degrees. You’ll be done with this recipe by the time your oven has heated up! Coat two ramekins with non stick spray and set aside.
In a medium bowl, melt the chocolate and butter in the microwave on low heat, checking and stirring frequently to avoid overheating. Once melted, add the powdered sugar and whisk to combine.
Add the egg and egg yolk and whisk that all together.
In a small bowl, combine the flour, cocoa powder and salt. Add those dry ingredients to your wet ingredients and whisk just until combined. Anything with flour you don’t want to over mix!
Divide the batter between the two ramekins. Bake until the center looks just set but is still jiggly. About 13-15 minutes. That jiggly center is your lava…bake too long and you’ll just have a cake.
Let those hang out for two minutes and try not to drool over them as you wait. Run a knife around the slides to ensure a perfect exit and them flip them over onto a plate. Sprinkle with powdered sugar if you want to be fancy or add ice cream if you’re feeling decadent. Or just eat it like it is!
