Cheesy Potatoes

Memorial day is around the corner and I am pretty committed to the outdoor cooking life. My husband may not be as big of a fan since I mostly prep the food and he does the actual grilling. However, since we moved, we have not purchased a real grill yet. By real, I mean a gas or propane grill. 

Currently, we are making a charcoal grill work when we need it. Everything cooks fine and tastes great but it’s a lot to get it going and heated, so I might be pushing my limits with how much I want to grill. The question now is to Weber or not to Weber? We want to invest in a decent grill that we won’t have to replace every year or two, but the price tag is tough to swallow. We’ll see.

Anyway, back to today’s grilling recipe. This one is courtesy of my mother. Growing up, we would grill all the time in the summer and my mom always wanted to eat dinner outside on the deck as soon as the weather was warm enough. Sounds familiar. With five kids, my mom was also a supporter of quick and easy dishes. We all know I certainly am too. Enter the cheesy potatoes. I like to think of these almost like having cheese fries but not as bad for you and pretty much just as delicious.

This recipe supports my favorite things about grilling- it does not require any dishes and it has less than ten ingredients. WIN! This is a very kid friendly meal, so if you need something to please the whole family, this is a great side to have in your grilling rotation. We eat this with chicken, burgers, or steaks. They’re always delicious! If you have leftovers, use them with eggs and some veggies for a yummy morning scramble. 

The trick with these potatoes is to cut them thinly and to give them the time they need on the grill. Now, when it comes to grilling, I feel like the temperature varies quite a bit, so you may have to use some judgement in this case. Usually they take about 30-45 minutes so you want to get them on before anything else, most likely. You can totally change up the cheese if you want to be adventurous, but we always prefer cheddar in our house. My brothers would be appalled and only want American, but to each their own! These are not the prettiest for dinner presentation, but again they taste good and please even the picky eaters.

Cheesy Potatoes

Ingredients

  • 2 lbs red potatoes
  • 1 tbsp oil
  • 4-6 tbsp butter
  • 1-2 tsp salt
  • 1/2 tsp black pepper
  • 1-2 tsp garlic powder
  • water around 1/2 cup
  • 4-5 slices cheese cheddar or american

Instructions

  • Thinly slice red potatoes and place in a bowl
  • Toss potatoes with oil and seasoning
  • Take 3-4 large pieces of tin foil and layer them to create a “bed” for potatoes
  • Put potatoes in middle of foil and fold up edges to create more of a bowl structure
  • Add water- about an inch to cover the bottom to prevent burning
  • Slice pats of butter and scatter on top of potatoes
  • Close tin foil completely and put it on the grill for 30-45 minutes
  • Once you can easily pierce with a fork, add the cheese slices and let it melt
  • Add more salt to taste and serve!
