Thinly slice red potatoes and place in a bowl
Toss potatoes with oil and seasoning
Take 3-4 large pieces of tin foil and layer them to create a "bed" for potatoes
Put potatoes in middle of foil and fold up edges to create more of a bowl structure
Add water- about an inch to cover the bottom to prevent burning
Slice pats of butter and scatter on top of potatoes
Close tin foil completely and put it on the grill for 30-45 minutes
Once you can easily pierce with a fork, add the cheese slices and let it melt
Add more salt to taste and serve!
