Cornbread Casserole

I think I’ve made it quite clear that Thanksgiving dinner is brought to you by the casserole. I am all about it. If you caught Grace’s stories and answers to your questions on Instagram yesterday, you know that casseroles make your prep much easier. You can prepare them ahead of time and usually bake them all at once. What is not to love? What’s your go-to casserole? I already shared my family’s tried and true recipes, so this is one that I have recently introduced to them. I like to include all the colors of the rainbow, so since we have already covered green and orange, we are moving on to yellow for this one.

Cornbread casserole. Also known as cornbread pudding, I think? Call it what you wish, but it may be better than cornbread. I don’t know. I can’t seem to nail a good cornbread. It’s often too dry or I over-bake it. I have tried many recipes, but no luck. So, the secret for me is, make the casserole instead! It’s so moist and delicious. I’m not sure why it’s not a staple in my house. ​

There are many recipes for this casserole, so it’s hard to pick one for the first time. This is my favorite variation, and even though I do love making most things from scratch, there are some things that are just better out of the box. So, we support Jiffy in this instance. It’s the right thing to do. I like using honey to add a touch of sweetness, but it is not in every recipe. I also like the cumin for just a touch of flavor, but it’s really not strong so most will not even notice it. 

This recipe is very simple in that you literally mix everything in a bowl and pour it into a glass or oven-safe pan and bake it for 50-60 minutes. It can be done in a jiffy! Add this to your Thanksgiving menu. It will be a hit. Pass the casseroles!

Ingredients

  • 15 oz whole kernel corn
  • 15 oz creamed corn
  • 1 c sour cream
  • 1 egg
  • 1⁄2 cup melted butter
  • 2 tbsp honey
  • 8 oz Jiffy corn muffin mix
  • 1⁄2 tsp cumin

Instructions

  • Preheat oven to 350
  • Mix corn, egg, sour cream, honey and cooled melted butter until combined.
  • Stir in the rest of the ingredients
  • Grease 9×9 square glass pan or oven-safe casserole dish
  • Cook 50-60 minutes or until golden brown
