Fall French Toast

Eggs, cereal, oatmeal, repeat… it can get old and bland sometimes. Starting the day with the same few items can really set the tone for your day. For some reason, this feels even more true when you’re not leaving the house to go to work. There are some days when I just need some really tasty french toast. I don’t know about you, but since we started quarantine, my breakfast game has gone in many directions, and now that fall is here, there are some excellent options.

In my opinion, french toast can go to another level just by using good bread. I have a pretty standard mixture I go by every time, but the bread can really change things. This recipe, of course, includes pumpkin. I just have to go with a pumpkin batter at least a few times for October. It feels wrong not to.


This is another great recipe for using that bit of pumpkin left in the can that you didn’t need for the bread or muffin recipe you made yesterday. You only need a little bit for this one and it just adds the best flavor. Put some pumpkin or cardamom coffee next to it and I call it a weekend brunch on a boring weekday. Obviously, you can make this any day and it will be delicious. 


I like using my double burner griddle for this recipe. It makes french toast twenty times easier when you can make six slices at a time. Especially if you want to share this with some friends, which you will. 


The other key to making this recipe really successfully is to use “day old” or somewhat stale bread. If you use a fresh loaf, you risk the soggy french toast problem. If it’s a little bit stale, it won’t absorb too much liquid and makes for a much better and even soaked slice. 

Another thing you can try or experiment with is the spices. This recipe is kind of a mashup of the flavors I’m loving lately, but they’re so versatile you can definitely change it to fit your preference. 

The ingredients here are pretty simple, and all you have to do is mix it together and dunk your bread. You can whip this up on any day and it will impress whomever is at your table!

Ingredients

  • zest of half an orange
  • splash of vanilla extract
  • 1 tsp pumpkin spice
  • sprinkle of cardamom and nutmeg
  • Butter for pan
  • Maple syrup/butter for topping!

Instructions

  • Slice bread if necessary
  • Whisk milk, eggs, pumpkin pureè, splash of vanilla
  • Add orange zest and spices and mix well
  • Start griddle so it’s nice and hot on the stove
  • Put some butter or coconut oil on the pan to prevent sticking
  • Dip bread into mixture and flip so both sides are coated
  • Place each piece on hot griddle until golden brown and flip so both sides have a little crisp
  • Enjoy with a little extra butter and some maple syrup!
