Sausage Tortellini Soup

March. The month that messes with all of our emotions here in NJ. We are itching for spring but winter is usually still lingering. I was in the mood for soup on this cold day, so I decided to make something delicious since soup season is coming to an end. I mean, some soups are acceptable in spring, but it’s just not the same. I went for a tomato based broth with pockets full of cheese, aka tortellini, and some salty sausage to make a full meal. This sausage tortellini soup hit the spot.

As I have already explained, I love soup for many reasons. One being that it is great for lunches and freezing for left overs. Second being that it can be a filling meal, but you can easily add some salad or grilled cheese to change it up and make it even better. 

Anyone else? My debate is always which type of broth do I want to go with? I love the creamy broth, but it doesn’t always make me feel great, so it’s unusual for me to go in that direction. When I go out, however, I’m always picking a chicken corn chowder or broccoli cheese soup. 

This soup recipe is so easy. As usual, you  could totally change up the pasta or meat, and even the vegetables. Make it spicy or sweet! I’m sharing the basics here, and sometimes that’s all you need! 

Simply saute the sausage and add the vegetables, spices, and broth. Layer those flavors! This is a tasty one. Happy almost spring!

Tortellini & Sausage Soup

Ingredients

  • 1 lb Italian sausage
  • 1 tbsp olive oil
  • 1 onion chopped
  • 2-3 carrots diced
  • 5 cloves garlic minced
  • splash of white whine optional
  • 1 tbsp basil
  • 2 tsp oregano
  • 2 tsp thyme
  • 1/2 tsp crushed red pepper
  • 1/2 tsp fennel seed
  • salt and pepper to taste
  • 14.5 oz diced tomatoes
  • 6 cups chicken or bone broth
  • 8-10 oz spinach
  • 16 oz frozen cheese tortellini

Instructions

  • Heat dutch oven or large pot
  • Add olive oil and heat
  • Add sausage and brown on medium heat
  • Drain sausage if you want to, then add onion, carrots, and celery.
  • Saute for at least 10 minutes so vegetables can soften.
  • Add the minced garlic and saute until fragrant.
  • Optional, add a splash of white wine just to deglaze the pan.
  • Next add in all of the spices. Add salt as needed.
  • Now pour in the can of tomatoes and stir to combine. Allow this to cook down a bit for 5-10 minutes.
  • Add in the broth and bring to a boil. Then simmer for about 10 minutes or really as much as you want!
  • For the spinach, you can use fresh or frozen! Either will work just fine. Add that in before you bring to a boil again for your tortellini.
  • Depending on if you use dried or frozen tortellini, the cooking time will vary. Once you add the pasta to the boiling broth, just cook as long as necessary.
  • Add more salt, pepper to taste and remove from heat. Serve with some parmesan on top and bread or salad on the side. Yum!
