Heat dutch oven or large pot
Add olive oil and heat
Add sausage and brown on medium heat
Drain sausage if you want to, then add onion, carrots, and celery.
Saute for at least 10 minutes so vegetables can soften.
Add the minced garlic and saute until fragrant.
Optional, add a splash of white wine just to deglaze the pan.
Next add in all of the spices. Add salt as needed.
Now pour in the can of tomatoes and stir to combine. Allow this to cook down a bit for 5-10 minutes.
Add in the broth and bring to a boil. Then simmer for about 10 minutes or really as much as you want!
For the spinach, you can use fresh or frozen! Either will work just fine. Add that in before you bring to a boil again for your tortellini.
Depending on if you use dried or frozen tortellini, the cooking time will vary. Once you add the pasta to the boiling broth, just cook as long as necessary.
Add more salt, pepper to taste and remove from heat. Serve with some parmesan on top and bread or salad on the side. Yum!
