Sicilian Pizza

Golden, crunchy, fluffy crust topped with sauce and cheese. While I love making pizza at home, it is often my go-to takeout food and doesn’t get made very frequently. I can easily call up about 10 pizzerias in my area (the joy of living in the northeast) and get a hot pizza brought right to my house.

All that to say, this is maybe the easiest pizza I’ve made and a recipe that has been added to the rotation in our house! Maybe I can save some money on my pizza takeout bill.

I was originally inspired by Serious Eats’ Sicilian Pizza recipe, but halved it for our 3 person family and simplified the technique to make it an easy week night meal. The recipe can easily be doubled or tripled to make multiple pizzas. It’s a great pizza recipe to feed a crowd since the pies cook pretty quickly too.

The dough is very easy to work with and comes together easily. If you don’t have a stand mixer, Serious Eats offers a way to do this in the food processor.

For the cheese, I like to use the pre-sliced mozzarella that is packaged or that comes from the deli. I typically just cover with one layer of cheese (about 6-8 slices) but will sometimes add a little more here and there if I feel the slices are on the thin side.

You can use your favorite pizza sauce to top this pie or even home-make sauce if you’re feeling ambitious. I use about half of one 14.5 oz can of sauce and save the other half of the can in the freezer for my next Sicilian pizza night.

Toppings are up to you! My toddler and I agree that just cheese is the best. When choosing toppings for the pizza, consider how much weight you are adding as that could affect how much the dough rises during baking. Your crust may not get as fluffy and crisp.

I hope you enjoy this recipe as much as I do! Growing up in New Jersey with a job in NYC, I am a very harsh pizza critic (one could fairly call me a pizza snob) and I think this is a good contender against any pizza I could have delivered to my house.

Ingredients

Dough

  • 250 g bread flour
  • 7 g salt
  • 3 g instant yeast
  • 10 g olive oil
  • 175 g warm water
  • 1/4 cup olive oil

Toppings

  • 6-8 slices mozzarella
  • 7 oz pizza sauce

Instructions

  • In the bowl of a stand mixer, combine the flour, yeast, salt and olive oil. Stir with the dough hook to combine.
  • Slowly add the water with the mixer on low. Once incorporated, increase the speed to medium-high and knead for 5-7 minutes.
  • Pour the 1/4 cup of olive oil into a 13×9 pan and coat the bottom and sides. Turn out the pizza dough into the pan and stretch it out to cover about half of the surface area of the pan. Cover with plastic and let rise at room temperature for 2-3 hours.
  • Preheat your oven to 500 degrees 20-30 minutes before your rise time is over.
  • Once risen, stretch the dough out further to the edges of the pan. Cover with 6-8 slices of mozzarella. Spread the sauce over the cheese. Top with Parmesan.
  • Bake for 12-14 minutes until the edges of the crust are golden brown and the cheese is melted.
  • Remove from the pan immediately onto a surface where you can cut your pizza. Enjoy!
