In the bowl of a stand mixer, combine the flour, yeast, salt and olive oil. Stir with the dough hook to combine.
Slowly add the water with the mixer on low. Once incorporated, increase the speed to medium-high and knead for 5-7 minutes.
Pour the 1/4 cup of olive oil into a 13x9 pan and coat the bottom and sides. Turn out the pizza dough into the pan and stretch it out to cover about half of the surface area of the pan. Cover with plastic and let rise at room temperature for 2-3 hours.
Preheat your oven to 500 degrees 20-30 minutes before your rise time is over.
Once risen, stretch the dough out further to the edges of the pan. Cover with 6-8 slices of mozzarella. Spread the sauce over the cheese. Top with Parmesan.
Bake for 12-14 minutes until the edges of the crust are golden brown and the cheese is melted.
Remove from the pan immediately onto a surface where you can cut your pizza. Enjoy!
