Snowball Cookies
It’s time! Cookie time! The most wonderful time of the year is my baking high. Grace is usually the baker at all times of the year, but I get really motivated during the holidays. Snow is in the air. At least, it certainly feels cold enough for snow. I think rain is in the forecast this week, unfortunately. So, the snow will come in the form of cookies! Snowball cookies to be exact.
I love baking simple cookies, so this one is high on my list. There are six ingredients, so it doesn’t get much easier than that. These are not super sweet, depending on your confectioners sugar, so they are great with a hot cup of tea or coffee. In my opinion, you can easily get away with eating them for breakfast. And we all know I love a recipe that can be eaten for multiple meals plus dessert.
If you need a simple recipe to make for neighbors or a cookie exchange, this is a great one for that too. They’re so quick and well-liked! Some recipes call for pecans in this type of cookie, but I prefer the walnut version. You can totally change it up depending on your preference! Walnuts are just so nice and soft with that bit of crunch. I have used this Tasty recipe for a long time and we eat them daily during the month of December.
In order to make these, you need to crush the walnuts pretty finely. You can put them in a zip lock and hammer away, or you can chop them with a knife. Then, you just mix everything together! I prefer using my KitchenAid mixer and doing the butter, sugar, and vanilla first before adding the flour and nuts. Once it forms a dough, you just roll into balls and bake. Then you dunk them in confectioners sugar and they’re done! If you want to double dunk for extra sweetness, that should satisfy your sweet tooth.

Snowball Cookies
Ingredients
- 2 sticks butter softened
- 1/2 cup sugar
- 1 tsp vanilla
- 2 1/4 cup flour
- 2 cups walnuts chopped
- 1 1/2 cups confectioners sugar
Instructions
- Take butter of out fridge so it softens
- In a stand mixer with paddle attachment, combine butter, sugar, and vanilla until smooth
- Place walnuts in a zip lock bag and crush with mallet or rolling pin. You can also chop them with a knife if you prefer.
- Add the walnuts and flour to the butter mixture.
- Combine until dough forms.
- Roll small balls of dough and place on cookie sheet with parchment paper.
- Bake on 325 F for about 25 minutes or until slightly brown.
- After cooling for a few minutes, and while cookies are still warm, roll cookies in confectioners sugar.
- Cool completely and enjoy!
