Spinach Cheese Puffs
Between New Year’s and Super bowl parties, appetizers and small bites take over the whole meal scene. I love a variety, so having a day of appetizers is the perfect party for me. Though, it takes a lot more time to make ten different dishes rather than a meal, so it’s understandable that this only happens for special events. You’ll thank me later if you put these on your menu. Spinach cheese puffs are the real game winner.
Tradition
So, this recipe for spinach cheese puffs that my mom makes for every family party or holiday. It’s a favorite. Everyone always asks if she will be making them. This is another magazine cut out recipe pasted in her recipe book, so I’m not sure where it’s from; however, we have enjoyed them for as long as I can remember. ​
Some recipes are just nostalgic and that makes them even better. For us, spinach cheese puffs are high on that list. But every time we bring them to an event, the recipe is requested at least once if not more.
You can totally buy some frozen appetizers, and they will probably satisfy the craving, but these puffs are so much better than anything you can buy at the store. They are The perfect little fluffy pillows of cheese and spinach. They’re light but crispy, and you cannot eat only one!Â
Process
One very important step of this process is to take out the frozen spinach and let it thaw in a colander for a few hours. You want most of the water removed. Once it’s ready, squeeze it with some paper towels to dry it a bit more.
Once the spinach is ready, the rest is simple and done in one pot.
Over medium heat, combine milk, butter, and salt. Once butter is melted and mixture comes to a low boil, remove it from the heat and add flour. Mix with a wooden spoon until combined.
Then add eggs one at a time, mixing well after each one.
Finally, add the spinach and shredded swiss and parmesan cheese and mix until well combined. Dough will be soft but formed.
Spoon 1-2 inch balls onto greased baking sheet and bake at 375 for about 15 minutes. They will be a nice golden color when done.
This dough can be made a day ahead of time and kept in the refrigerator until you’re ready to bake. These are best served warm, and your house will smell so good your guests’ mouths will be watering when they come out of the oven.
These spinach cheese puffs are great to make as an appetizer for a dinner party, or add it to your small plate rotation for this year’s super bowl. Go team!
Spinach Cheese Puffs
Ingredients
- 1 cup milk
- 1 stick butter
- 1 tsp salt
- 1 cup flour
- 4 eggs
- 1 cup shredded swiss cheese
- 1/2 cup parmesan cheese
- 10 oz frozen chopped spinach thawed
Instructions
- Thaw spinach and pat dry with paper towels
- In a pot over the stove, heat milk, butter, and salt until butter melts and mixture comes to a boil.
- Remove from heat and add flour. Mix with a wooden spoon until dough forms and sides of the pan are clean.
- Add eggs one at a time, mixing well after each addition.
- Add cheeses and spinach and combine.
- Spoon onto lined cookie sheet at least one inch apart.
- Bake on 375 for 15-20 minutes
- Serve warm for best results!
Simple to make, easy to bake, and better than cake. These are an appetizer that I will continue to make for years to come!
