Sweet Potato Casserole
It’s time! The glimmer of hope and magic that we have all waited for this year. Casserole season! But seriously, are casseroles now just known as “one pot” meals? I think they’re the same thing. Anyway, now that it’s really November, I’m thinking about Thanksgiving. Our plans are still being worked out as we are hoping to actually MOVE next week! Crazy. It has felt like forever since we started renovating our first home, and it’s finally coming together.
So, we really want to host Thanksgiving, but it would just be with a few close family members. Either way, I plan on making all of the classic staples and maybe a few new twists. This week I’m sharing two of my orange dishes!
The first one is of course a casserole. Sweet potato to be exact. In our house, sweet potatoes are very common. I roast them at least once a week. But once November hits, I am making this specific recipe probably once a week for whatever party we are going to or hosting. It is delicious and a treat because of the bit of extra sweetness. I would say it’s almost on pie level, but you can eat it for dinner.
What about you? Are you a casserole believer? Some things are just better when they’re made the way they always were meant to be made. Though, I can’t support the sweet potatoes with marshmallows…that one is too weird for me. Marshmallows always belong with chocolate and/or peanut butter, but that’s it.
This recipe requires some time for baking the sweet potatoes first and then mixing the ingredients before baking a second time, but it’s worth it. After baking the potatoes, you simply mix them with the base ingredients and separately mix the topping. It’s easy besides the baking wait time! Again, this is a go-to for me. Many of my friends and family request this recipe for this season events. I’ll be making it just for me if we aren’t going anywhere! Pandemic Thanksgiving in any form requires this casserole.

Sweet Potato Casserole
Ingredients
- 5 lbs sweet potatoes
- 1/3 cup butter plus 4 tbsp melted for topping
- 3 tbsp sugar
- 3 eggs
- 3/4 cup milk
- 2/3 cup chopped pecans
- 2/3 cup packed brown sugar
- 4 tbsp flour
Instructions
- Bake sweet potatoes in oven on 350F until soft (time depends on size of potatoes but usually around one hour)
- In a bowl, mix the warm sweet potatoes (toss the skin, or eat it!) with cup butter and sugar until melted/dissolved and once potatoes have cooled off, add egg/milk mixture.
- Pour potatoes in greased casserole pan
- In separate bowl, combine pecans, brown sugar and flour. Stir in 4 tbsp melted butter. Sprinkle mixture over the sweet potatoes and bake at 325F for about 1 hour.
