Sweet Potato Casserole

This classic thanksgiving dish makes a great side dish for any fall meal.

Ingredients

  • 5 lbs sweet potatoes
  • 1/3 cup butter plus 4 tbsp melted for topping
  • 3 tbsp sugar
  • 3 eggs
  • 3/4 cup milk
  • 2/3 cup chopped pecans
  • 2/3 cup packed brown sugar
  • 4 tbsp flour

Instructions

  • Bake sweet potatoes in oven on 350F until soft (time depends on size of potatoes but usually around one hour)
  • In a bowl, mix the warm sweet potatoes (toss the skin, or eat it!) with cup butter and sugar until melted/dissolved and once potatoes have cooled off, add egg/milk mixture.
  • Pour potatoes in greased casserole pan
  • In separate bowl, combine pecans, brown sugar and flour. Stir in 4 tbsp melted butter. Sprinkle mixture over the sweet potatoes and bake at 325F for about 1 hour.
