Sweet Potato Casserole
This classic thanksgiving dish makes a great side dish for any fall meal.

- 5 lbs sweet potatoes
- 1/3 cup butter plus 4 tbsp melted for topping
- 3 tbsp sugar
- 3 eggs
- 3/4 cup milk
- 2/3 cup chopped pecans
- 2/3 cup packed brown sugar
- 4 tbsp flour
Bake sweet potatoes in oven on 350F until soft (time depends on size of potatoes but usually around one hour)
In a bowl, mix the warm sweet potatoes (toss the skin, or eat it!) with cup butter and sugar until melted/dissolved and once potatoes have cooled off, add egg/milk mixture.
Pour potatoes in greased casserole pan
In separate bowl, combine pecans, brown sugar and flour. Stir in 4 tbsp melted butter. Sprinkle mixture over the sweet potatoes and bake at 325F for about 1 hour.
